Bolognese sauce

My all time favourite dish is without a doubt Spaghetti Bolognese. In fact, any dish with tomato sauce drives me over the edge, it is my all time favourite comfort food. This recipe is my mom’s recipe and I did not change it too much. This is not the traditional italian way of doing it, but I believe the secret of this yummy sauce is the simmering of the tomatoes, onion and spices for hours on low heat, so  all those wonderful tomato flavours develop. The meat is cooked separately and drained of all fat and mixed to the tomato sauce and simmered for another 2 hours or so. This allows all these flavours to blend and intensify.


My favourite childhood memory is without a doubt coming home from school  to the smell of the tomato sauce that had been simmering all afternoon!  Till this day, the smell of tomato sauce cooking all day long brings back those wonderful childhood memories.

I’ve only added a few ingredients to my mom’s recipe, which I think brings it to the next level. It is so easy to prepare and the aroma that you get in your home cooking this sauce is just unbelievable.

 

What you will need

796 ml or 28 oz can of whole tomato

300 ml or 10 oz of tomato paste

700 ml or 24 oz of strained tomatoes

2 medium onion

1\4 teaspoon of celery seeds

1\4 teaspoon of dry oregano

4 bay leaves

1 glove of garlic

1\4 cup of fresh chopped parsley

3 tablespoons of italian salad dressing ( my secret ingredient)

salt and pepper

2 lb. of ground beef

Directions

In a large pot, combine the tomatoes, the strained tomatoes, tomato paste, one chopped onion, the garlic, celery seeds, dry oregano, parsley and the italian salad dressing; pepper to taste and bring to a boil stirring constantly; lower the heat and simmer for about 2 hours stirring occasionally.

Cook the ground beef with one chopped onion,until the meat browns. Salt and pepper to taste. Drain the fat from the meat and add to the tomato sauce in pot. Continue to simmer for another 2 hours.
