This is a super good recipe that will impress your guests, and the best part is , it’s super easy to make. You can even cheat and buy prepared sauce and french crepes! Come on, nothing easier than that, right?

But if you are like me and truly enjoy the process of cooking, you’ll make it from scratch! Making French crepes is really not complicated. The secret for perfect crepes is to let the batter rest on the counter for about 30 minutes, using a good non stick pan, and most of all, DON’T PANIC if your crepes are not perfectly round!

Home cooking should be fun and stress free, and after all, the crepes will be stacked in a pie dish, no one will notice the imperfections! You can prepare the French crepes the day before (that is what I usually do).

I use my bolognese sauce ( recipe here) , but you can buy a prepared jar of your favourite pasta sauce. Even a meatless pasta sauce with chunks of veggies, like a primavera sauce would work very well. If you follow my recipe for Bolognese sauce, you will end up with more sauce than you need for this recipe, simply portion the left over sauce and freeze it for pasta night!

Ingredients
  • FOR THE FRENCH CREPES:
  • 3\4 cup of all purpose flour
  • 1 large egg
  • 1 egg yolk
  • 1 1\4 cups of milk
  • A pinch of salt
  • 1 tbsp of olive oil
  • FOR THE BOLOGNESE CREPE PIE:
  • 4 cups of bolognese sauce (recipe here)
  • 2 cups of tex mex cheese
  • 4 basil leaves (chopped)
  • 1 tbsp of freshly chopped parsley
Directions
  1. FOR THE FRENCH CREPES:
  2. In a bowl mix the flour and a pinch of salt.
  3. Make a well in the middle.
  4. Add in the egg, the egg yolk and 1\3 cup of the milk.
  5. Whisk together, while gradually pouring in the rest of the milk.
  6. Now whisk in the oil.
  7. Set aside for about 30 minutes before cooking.
  8. In a hot, non stick crepe skillet, pour in about a quarter cup of the batter (enough to cover the skillet).
  9. After 2 minutes, using a spatula to lift the crepe, turn it over, to cook the other side.
  10. Cook for another minute or 2, then slide onto a plate.
  11. Continue cooking the rest of the batter in the same manner, this recipe will yield 8 crepes.
  12. FOR THE BOLOGNESE CREPE PIE:
  13. In a 9 inch round pie dish, spoon in a little sauce at the bottom.
  14. Place on a French crepe, then spread on about 1/4 cup of bolognese sauce.
  15. Place another crepe on top and spread on another 1/4 cup of bolognese sauce.
  16. Do this with 2 more crepes (for a total of 4 layers).
  17. Sprinkle on 1 cup of tex mex cheese.
  18. Place on another crepe and then sauce and continue until you use all the crepes.
  19. Top with the remaining cup of tex mex cheese.
  20. Cook in a preheated oven at 350 F for 30 minutes or until the cheese is melted and bubbly.
  21. Garnish with the basil and parsley.
