There is no need to tell you how much I LOVE growing some of our food right on my kitchen counter. If you follow us, you already know how obsessed I am with my little AeroGardens. Lettuce and small tomatoes are among the things I grow on a constant basis. Not only is it fun and rewarding, but it’s very inexpensive to produce!

In fact, I have bought only one kit of Tom Tomatoes. From the first crop I got, I took a few tomatoes from the healthiest plant and harvested the seeds. Now I grow all my little tomatoes from these seeds, each time taking the tastiest ones from the healthiest plant, creating my own heirloom variety!

Why spend money on seeds when nature provides them for you! Right!!??  Now I have done this with tomatoes only, but I intend to do this with everything I’m growing. Next I will let my romain lettuce flower, to extract it’s seeds, creating my own heirloom romaine lettuce! 😀 ok enough said about this.

Back to our roasted cherry tomatoes and garlic. One of the simplest pasta toppings you can make. Although I enjoy this with pasta, it is also delicious on toasted garlic bread! Simply halve the tomatoes, place on a cookie sheet or non stick oven dish, add the garlic, drizzle with olive oil, salt and pepper and roast in the oven. When done, drizzle a little balsamic vinegar and toss in the fresh basil leaves for extra flavour and your done! Easy right!?!

Ingredients
  • 1 lbs of cherry tomatoes (halved)
  • 2 tbsp of olive oil
  • 4 garlic cloves (chopped)
  • Salt and pepper to taste
  • 1 tsp of fresh parsley (chopped)
  • 4 leaves of fresh basil (chopped)
  • 1 tbsp of balsamic vinegar (optional)
Directions
  1. Halve the cherry tomatoes and spread evenly in one layer on a cookie sheet or non stick oven dish.
  2. Sprinkle on the chopped garlic.
  3. Drizzle 2 tbsp of olive oil over the tomatoes.
  4. Add the chopped parsley.
  5. Salt and pepper to taste
  6. Bake in a preheated oven at 400F for about 30 minutes.
  7. Remove from the oven, add on the freshly chopped basil.
  8. Drizzle on the balsamic vinegar (optional)
  9. Toss and serve over pasta or garlic toast.
