Hard to believe that next Monday is already Thanksgiving! Yes, in one week it’s the Canadian Thanksgiving. Where did the summer go!?! I mean, it seems that it started only a few weeks ago! Well, looks like it’s almost over and fall is knocking at our door.

The only good thing (for me that is) about the cold season is the comfort food I make. I really don’t like the cold season, so for me, the way I deal with it, is by cooking comfort foods that fill the house with wonderful aromas.

Thanksgiving would not be Thanksgiving without a casserole; turkey, sweet potatoes and of course pumpkin pie! Pumpkin pie is so easy to make, delicious and also nutritious, a win win situation right?

I love using graham crumbs to make the pie shell. I always use the honey graham crumbs because it’s already sweet and there is no need to add sugar to the mix. In this recipe I have used a can of pure pumpkin puree simply because I like to control the amount of spices I add, but you can take a short cut by using a can of pumpkin pie filling instead.

Ingredients
  • FOR THE CRUST
  • 1-1/4 cups of honey graham crumbs
  • 1/4 cup of melted butter
  • FOR THE FILLING:
  • 1 - 14 oz can of pumpkin puree
  • 1 - 10 oz can of condensed sweetened milk
  • 1 tsp of cinnamon
  • 1/2 tsp of dry ginger
  • 1/4 tsp of nutmeg
  • 2 eggs (beaten)
Directions
  1. FOR THE CRUST:
  2. Mix the honey graham crumbs with the melted butter.
  3. Press into a 9 inch pie plate.
  4. Set aside.
  5. FOR THE FILLING:
  6. In a large bowl, mix the pumpkin puree with the condensed milk using a spatula.
  7. Add in the spices and mix.
  8. Add the beaten eggs and gently mix in without over doing it.
  9. Pour the pie filling into the crust.
  10. Baked at 425F for 15 minutes.
  11. Reduce heat to 350F and bake for another 40 minutes.
  12. Let cool before serving.
