Asian Inspired Pork Meatballs

First things first, these Asian inspired pork meatballs were a super hit for us! Love the taste of ginger with the sweet and spicy Asian sauce. Delicious and easy to make, fast enough for a weeknight dinner, and not to mention very economical. I’ve served these over a bed of rice and then spooned the leftover sauce on top.

Now, like I mentioned in my previous post, my pictures are being used left, right and center without my permission. I should be flattered that restaurants think that my pictures are good enough to be used on their menus, but I’m not. Now, I will have to get over it since there is nothing I can do about it.

All of this has got me thinking, and a lot! I feel the need to make big changes on the blog, and honestly, it is a bit overwhelming. Sometimes I feel really proud of what I have achieved, and other days where I notice that other bloggers are doing far better than I (comparing myself to others is never a good thing for me).

I may need a little break from working on this blog (or not, it seems that I change my mind every 5 minutes) but if I do take a break from posting, please know that I am still working on improving the site. I’m planning to change the layout and I want to find a style of photography that works better for me. A style that will make my pictures stand out, yet be unusable for restaurants to steal.

Asian Inspired Pork Meatballs

Ingredients
  • FOR THE MEATBALLS:
  • 1 lbs of ground pork
  • 1/2 cup of Panko breadcrumbs
  • 2 tbsp of freshly chopped parsley
  • 2 cloves of garlic (minced)
  • 1 tsp of freshly grated ginger
  • 1/4 tsp of salt
  • 1/4 tsp of black pepper
  • FOR THE SAUCE:
  • 1/2 cup of soy sauce
  • 1 tbsp of rice vinegar
  • 1 tbsp of chili garlic sauce
  • 3 tbsp of honey
  • 1 tsp of sesame oil
  • 1 tbsp of freshly chopped parsley
Directions
  1. FOR THE MEATBALLS:
  2. In a bowl, mix all of the ingredients for the meatballs.
  3. Using a 1/4 cup measure, form the meatballs and place them on a cookie sheet lined with parchment paper.
  4. Bake in a preheated oven at 400F for 15 minutes.
  5. Turn the meatballs onto the other side and continue baking for another 15 minutes.
  6. While the meatballs are cooking prepare the sauce.
  7. FOR THE SAUCE:
  8. In a large pan, mix all of the ingredients for the sauce.
  9. Bring to a simmer.
  10. Add the meatballs to the sauce and simmer a few minutes.
  11. Serve with rice.
