Ok, lets have it! I have seen these little apple pie cookies all over Pinterest and wanted to make some for the longest time. Since I love apple pie and since I don’t have to much of a sweet tooth these are the perfect cookies for me!

These little cookies are becoming my favourite treat! They have just the right amount of dough, the right amount of sweet and they are so darn cute!  When making these little cookies, you will want to roll out the dough a little bit thinner than you would normally for a pie. Remember, you are not making pie, but cookies, so you will want to have the dough thinner than normal.

Since the dough will be thinner, the cookies will cook faster than a pie, so you will have to cook the apples first. Once the apples are cooked, I’ve separated the pie dough in half. I roll out the dough, then spread on the caramel sauce, then the apple preparation, then I roll the second dough and cut it in 1/2” strips.

I made a simple lattice pattern (see picture) . Then I simply used a glass to cut the cookies (you don’t need a cookie cutter for this) . Now you will be left with bits and pieces, you dont want to throw them away.

Just break them into pieces and bake them as well, they don’t look pretty, but they taste just as amazing!

Ingredients
  • For the filling:
  • 5 apples (cut into small pieces)
  • 2 tbsp of butter
  • 2 tbsp of sugar
  • 1 tbsp of lemon juice
  • 1 tbsp of honey
  • 1/2 tsp of cinnamon
  • 1tbsp of flour
  • 1/2 cup of caramel sauce
  • For the pie dough:
  • 1 1/2 cup of flour
  • 1/2 cup of cold butter (cut into cubes)
  • Cold water (about 3 tbsp)
Directions
  1. For the filling:
  2. In a sauce pan melt the butter.
  3. Add in the apples and cook for a few minutes.
  4. Add in the sugar, honey, lemon juice and the cinnamon.
  5. Cook until the apples are tender (about 5 minutes)
  6. Add in the flour and mix.
  7. Reserve.
  8. For the pie dough:
  9. Put the flour in a food processor.
  10. Add the cold butter cut into cubes.
  11. Pulse until you get a grainy texture.
  12. Add in the cold water little by little until the dough holds together.
  13. Wrap in a plastic film and refrigerate for about 30 minutes.
  14. To make the cookie:
  15. Divide the dough in half.
  16. Roll out the dough thinly on a floured surface.
  17. Spread the caramel sauce over the dough.
  18. Add on the apple mixture.
  19. Roll the second dough out and cut it in 1/2” strips.
  20. Place on the strips of dough in a lattice pattern.
  21. With a glass or cookie cutter, cut out circles.
  22. Place the cookies on a cookie sheet lined with parchment paper.
  23. Prepare an egg wash (1 egg with a little milk) and brush onto the cookies.
  24. Bake in a preheated oven at 350F for about 20 to 25 minutes or until golden brown.
